I can’t help but feel like I’m pulling off a magic trick when I turn those awful poky bull thistles into sweet celery sticks. They’re a favorite raw trailside nibble and you’re harvesting an invasive plant so by all means, eat all you want!

As is the law with all greens, you want them when they’re young and still rosettes simply because they’re the most tender. Cut out the heart with the flower bud and you can peel and eat raw or you can treat them like you would that other giant thistle, artichokes.
